
Bread Kvass
Description
The recipe won't take much time. Delicious homemade kvass is incomparable to store-bought one. So let's not be lazy and prepare an excellent kvass from bread croutons for the hot summer. It not only quenches thirst perfectly, but can also be used to make okroshka. Plus, this drink is quite healthy. Can be served.

Cut the bread into small cubes and dry in the oven. You can even slightly overtoast them to develop a slightly bitter taste.

Transfer the breadcrumbs to a large pot and pour boiling water over them.

Add sugar.

The already softened breadcrumbs can be slightly crushed. Cover with a lid and let the mixture cool down to about 20-25 degrees.

In a small bowl, take a little liquid from the pot with croutons, add a little sugar, and dissolve the yeast.

When the yeast mixture rises with a foamy cap, pour it into the pot with the breadcrumbs and mix. Cover tightly with gauze and place in a dark, warm place for 1.5–2 days.

The kvass is fermenting, the croutons should rise to the top.

Strain through cheesecloth and gently squeeze the soaked breadcrumbs. They can be used as a starter for the next batch of kvass.

Pour the kvass into bottles (but don't fill them completely!). Add a few raisins to each bottle. Leave them overnight in a warm place, then carefully pour the kvass once again, as there will be a white sediment at the bottom. After that, place the bottles in the refrigerator for another day or two. The longer it sits, the more carbonation will develop in the kvass.
