Dilute rye flour with boiling water to avoid lumps. Add sugar and mint (optional). To the cooled mixture, add washed raisins and rye bread crusts. Cover the container with gauze and keep in a cool place for two days.

If a lot of foam has formed on the surface — the kvass is ready! Strain and pour into jars or bottles, store in the refrigerator.
