
Cranberry kvass
Description
The recipe won't take much time. To prepare cranberry kvass at home, follow these instructions: 1. Sort the cranberries and wash them in cold water. 2. Crush the cranberries in a bowl. It's best to use a wooden spoon. 3. Boil water and pour it into the bowl. 4. Cover the bowl with a lid and let the mixture steep for 24 hours at room temperature. You can additionally wrap the bowl in a towel. 5. After 24 hours, strain the mixture into another bowl through a sieve. 6. Add yeast and stir thoroughly. 7. Wait for foam to appear. 8. Meanwhile, steep mint in boiling water and let it infuse for 7 hours. 9. Add the mint to the cranberry mixture. 10. Add sugar and vanilla. Stir well. 11. Pour the nearly ready kvass into bottles and seal them tightly. 12. Let the kvass sit for 2 more days at room temperature. 13. After 2 days, the kvass will be ready. This is the classic recipe for "Staraia Moskva" (Old Moscow) cranberry kvass. The kvass will have a slightly tart taste. If desired, you can add more sugar. Serve chilled.
