
Kvass made from yeast and sugar
Description
The recipe won't take much time. Prepare all the ingredients—they should be at room temperature. You can use either spring or tap water; there's no need to boil it. Serve chilled.

1. To make kvass, we need two types of bread (black and white). I prepare kvass using a white bread roll. You can use regular white "brick" bread. Cut both types of bread into cubes. Do not remove the crust.

2. In a preheated oven, toast both types of bread for 7–9 minutes until slightly browned. Remove from the oven and let cool. Place the mixture of toasted breadcrumbs into a jar. Add yeast and sugar. Pour spring water into the jar until full.

3. Cover the jar with a lid so that the lid barely touches the jar. Do not seal it tightly, as the kvass will ferment and foam, and a tightly closed lid may pop off. Place a container under the jar to catch any spills during fermentation, preventing the kvass from overflowing onto the surface. Leave the kvass like this for 3 days.

4. After 3 days, filter the kvass through a double-layered gauze. Add a little more sugar to taste and serve the kvass chilled.

5. Serve the kvass at the table. The light, tasty, sparkling drink is ready. Kvass quenches thirst and cools the body during summer heat.
