
Yeast-based kvass
Description
The drink is prepared quickly and easily. Below is one of the simplest methods for making yeast-based kvass at home. As a result, we obtain 3 liters of starter, which can be used to make a little over 6 liters of kvass.

Step 1

Boil the water. While the water is boiling, add the dry kvass mix into a previously sterilized jar. Pour the boiled water into the jar.

Stir, cover the jar with a lid, and let it steep for 2 hours.

Add sugar to the jar, mix well, and let it sit for another 30 minutes, covered with a cloth.

Pour a small amount of liquid from the jar into a bowl. Add the yeast to this bowl, stir, and pour everything back into the jar. Let it steep for about 13 hours.

Now you can strain the liquid through a sieve. We end up with a starter. Store it in the refrigerator. To make kvass, mix the starter with water in a 1:1 ratio. Add a couple of tablespoons of dry kvass, sugar to taste, and leave it in the refrigerator for 24 hours.
