Chicory kvass

Description

The recipe won't take much time. The kvass I'm offering you now tastes no different from the regular kind we make at home. It turns out rich and bread-flavored, even though there isn't a gram of bread in it. If you reduce the sugar slightly, you can easily use it for preparing okroshka. But if you prefer sweet carbonated drinks, then on the contrary, increase the amount a bit. Also, you won't wake up with swelling in the morning, even if you drink it before bed. Just make sure to use high-quality yeast and don't leave the kvass in a warm place, otherwise it will over-ferment and turn into something resembling moonshine. The drink is ready to serve.

    Prepare all the necessary ingredients for making chicory kvass.

    Pour water into a saucepan. Add sugar, chicory, and citric acid, mix well, and place over heat. Bring to a boil, then remove from heat. Cool the drink to approximately 30 degrees.

    Add the dry yeast to the drink in a saucepan and stir until dissolved and well combined.

    Pour the kvass into a container—I used a 3-liter jar—close it with a lid, and place it in a warm spot for 4 to 6 hours.

    Place the ready kvass in a cool place to chill. Pour into glasses and serve.
