
Kvass
Description
The drink is prepared quickly and simply. Traditional kvass is made from barley grains, but at home we can simplify the process and make delicious kvass from rye bread. The process is quite easy, but not fast. We don't lack patience, so let's read the recipe. The drink is ready to serve.

Slice the bread and dry it in the oven. You can even slightly over-dry it, so that a very dark crust forms on some pieces.

Transfer the bread to a large pot or bucket and pour boiling water over it. Add sugar, stir, and let it cool down to about 30 degrees.

In a small cup, place the yeast and add a spoonful of sugar. If you are using dry yeast, add a little water from the pot with the bread.

The yeast should rise into a foamy cap. Pour it into a pot with the cooled soaked bread. Mix well. The softened bread can be crushed.

You can leave it to ferment in a bucket, or you can distribute it into jars. Just don't fill the jars to the very top. Cover the jar openings with gauze and lids with holes. Leave in a warm, dark place for a couple of days to ferment.

Now we need to strain everything through a linen cloth.

Squeeze thoroughly; the soaked bread can be used as a starter for the next batch of kvass.

Pour the resulting liquid into bottles, but again do not fill them to the very top. You can add a few raisins to each bottle. Place in the refrigerator for another day or two.
