
Kuzikmyak (hearty potato pancake)

Perfect with tea and coffee. These thin flatbreads are great for a quick snack or a hearty meal. After reading the recipe, serve cooled or slightly warm.

1. Peel the potatoes, cover with water, add salt (1 tsp), bring to a boil and cook until tender.

2. Prepare the ingredients for the dough. Sift the flour into a bowl.

3. Melt the butter (50 g) in warm milk, add the egg, salt (1/2 tsp), sugar (1 tsp), and pepper. Mix until smooth. Add the flour and knead into a soft, non-sticky dough. Wrap the dough in plastic wrap and let it rest for 15 minutes.

4. Peel the onion, chop finely, and sauté in butter (10 g) until translucent. Drain the cooking liquid from the cooked potatoes and mash them with a potato masher. Add the onion, milk, butter (20 g) to the potatoes, and mix until smooth.

5. Divide the dough into 12 equal parts. Roll each part into a thin, translucent round flatbread 15 cm in diameter.

6. Fry the pancakes on a dry hot skillet for about 1 minute on each side.
