
Kuurdak from lungs
Description
The dish is prepared without unnecessary complications. This is a classic recipe for cooking kuurdak from lungs. To prepare this wonderful dish, I used the following ingredients: liver, lungs, heart, tail fat, onion, potato, bay leaf, salt, and pepper. Serve hot; it looks especially attractive when garnished with finely chopped dill and parsley. Good luck! The ready dish can be served at the table.

Cut all the offal into small cubes. Finely chop the fat and onion as well.

Place the fat into a preheated cauldron and render all the fat, then remove the cracklings.

Place the heart into the boiling fat and fry for 15 minutes, then transfer to a plate.

In the remaining fat, fry the lungs for 15 minutes. Set the lungs aside on a separate plate. Place the liver in the cauldron, fry for 10 minutes, then add the heart, lungs, and chopped onion. Fry for another 10 minutes, stirring.

Pour the broth into the cauldron, add salt and pepper to taste. Simmer for 15 minutes.

Cut the potatoes into cubes and place them in a pot, simmer covered for 20 minutes, stirring occasionally.

Remove the pot from the heat, add a couple of bay leaves. Garnish with fresh herbs when serving.
