Rice and raisin kutya

Description

The dish is prepared without unnecessary complications. Depending on the occasion, kutya can be either a festive dish (for Christmas) or a memorial one. In the first case, it symbolizes universal resurrection, and in the second, rebirth (the soul after death). Originally, only wheat grains were used to make kutya, but later this simpler version with rice and raisins appeared. In my opinion, this version is much more convenient, especially since it's not that easy to find wheat these days, and the porridge made with rice turns out just as delicious. I'm sure that once you prepare kutya with rice and raisins at home, you'll be making this wonderful dish not only for holidays but also in everyday life, because it's truly very tasty and healthy as well. The ready dessert can now be served.

    First, we need to rinse the raisins and pour boiling water over them, letting them soak for 10–15 minutes. We also rinse the poppy seeds, pour boiling water over them, drain the water, then rinse them again, pour boiling water over them once more, cover with a lid, and let them soak for 20–25 minutes.

    Meanwhile, we boil the rice until fully cooked, then cover it with a lid to let it finish steaming. After that, we add honey to the rice and mix everything together.

    Now drain the water from the poppy seeds and place them in the food processor bowl, add sugar and blend everything. Alternatively, you can simply grind the poppy seeds with sugar in a mortar until poppy milk forms.

    Place the rice on a plate (I used a special ring for this), pour the poppy seeds mixed with sugar over it, sprinkle with raisins, and add candied fruits and chopped nuts if desired. Serve kolya. Enjoy your meal!
