
Kutya with raisins
Description
This is a traditional, simple recipe for kutya with raisins. Kutya is made with: wheat, poppy seeds, honey, raisins, dried apricots, and hazelnuts. Here, hazelnuts replace the traditionally used walnuts in kutya. However, in my opinion, it tastes much better with hazelnuts and is also more unusual. Make sure to prepare the wheat ahead of time—before making the kutya, soak it in water for several hours (or overnight). Do the same with the poppy seeds. Good luck!

Pour water over the wheat grains and let them soak for several hours. Then drain the water and rinse the wheat under running water.

Pour water into a saucepan, add the wheat, and bring to a boil over high heat without a lid. Cook until soft, about 20–30 minutes. Then remove the saucepan from the heat and let it cool. Pour most of the wheat broth into another container, leaving a small amount in the saucepan with the wheat.

Soak the poppy seeds in warm water for a couple of hours.

Strain the poppy seeds through a sieve. Drain most of the water, leaving a little.

Grind the poppy seeds with a blender until the white juice (white milk) is released.

If you have thick honey, warm it in a water bath to make it more liquid.

Mix the honey with the poppy milk.

Chop the apricots into small cubes, grind the nuts in a blender.

Add poppy milk with honey to the pot with wheat.

Add the apricots, nuts, and raisins here as well.

Thoroughly mix the contents of the pot. Let it steep in a cool place for 1-2 hours.

Everything is ready, you can serve the kutia. Decorate the top with dried apricots, raisins, and nuts.
