Description

Kutia is a traditional Christmas dessert. This is a rich dish made with delicious ingredients, simple and enjoyable to prepare. Boil the wheat, soak the poppy seeds (preferably in advance). Then grind everything, mix, season with honey, and serve on the festive table.

    I buy wheat already polished, as it cooks faster and tastes better.

    I soak the poppy seeds for 6-8 hours in cold water.

    I cook wheat in sweetened water in a 1:2 ratio. After boiling, it should simmer for 20 minutes (depending on the type and preparation of the wheat, cook until done).

    I grind the nuts through a meat grinder (medium plate).

    I rinse the raisins under running water.

    It's better to buy halva with peanuts or dried apricots.

    I boil the water and set it aside to cool. I mix boiled wheat, raisins, nuts, halva, half of the sugar portion, and honey.

    I pour room-temperature water over everything. The water should completely cover all the ingredients. While the sugar and halva in the kutya are dissolving, we'll prepare the poppy seeds.

    I drain the poppy seeds from water and place them in a mortar.

    I grind the poppy seeds with a "makogon" until a white "milk" appears. Then I grind the poppy seeds with sugar once again.

    I pour water over the poppy seeds. This results in a white sweet liquid with ground poppy seeds, which I pour into the kutya where sugar and halva have already dissolved.

    In our family, we like liquid kutya. So I add a little more water, mix everything, add sugar to taste, and serve.
