Not everyone observes Orthodox traditions these days, but since it's never too late to start, I offer you an excellent recipe for making wheat kutya. This dish has always held a special place on the Christmas table, as it symbolizes eternal life and abundance, as well as representing heavenly bliss. To understand why this dish embodies all that is pure and good, you simply need to prepare wheat kutya at home. Then you'll see how the combination of whole wheat grains with honey, dried fruits, poppy seeds, and nuts creates an amazing result, making the dish truly delicious and rich. First of all, we need to carefully sort the wheat, rinse it thoroughly, and soak it for several hours, or better yet, overnight.

In the morning, drain the water from the wheat, add fresh water, and simmer over low heat until fully cooked.

Now pour 2 liters of water into a pot and place it over the heat. Sort through the dried fruits and rinse them thoroughly.

After the water comes to a boil, add the dried fruits to the pot and simmer for 10-15 minutes over low heat. Then remove from heat and let the uzvar steep for several hours.

While the fruit drink is steeping, we rinse the poppy seeds and pour boiling water over them. Then we drain the water, rinse the poppy seeds again, pour boiling water over them once more, cover with a lid, and let them sit for half an hour.

Drain the water from the soaked poppy seeds and grind them in a mortar together with sugar.

Rinse the raisins and soak them in boiling water for 10-15 minutes. Dry the nuts in the oven or on a dry skillet, then remove the skins and chop them.

Place the cooked wheat into a bowl, add poppy seeds, dried fruit compote, raisins, nuts, and honey.
