
Kutabs with herbs and cottage cheese
Description
Delicious pastries for the whole family. Kutabs with herbs and cottage cheese are tasty flatbreads made from unleavened dough. For the filling, use rich, flavorful cottage cheese and different kinds of herbs. I used parsley and dill. You can also add cilantro. The dough is kneaded using flour, water, salt, and a small amount of vegetable oil. Serve cooled or slightly warm.

Prepare all the ingredients.

Add salt to the water and stir.

Pour in a little oil, and the dough will be more elastic.

Add the sifted flour.

Knead a stiff dough. Let it rest for 15 minutes.

While the dough is resting, prepare the filling. Chop the greens, finely chop the dill and parsley.

Mix the cottage cheese with herbs, add a little salt to taste, and you can add pepper if desired.

Divide the dough into 7–8 balls.

Roll out each dough ball thinly, about as you would for chebureki.

Spread the cottage cheese filling over half of the dough.

Fold the dough over with the free edge and pinch the kutabs closed.

Heat a thick-bottomed frying pan and place the kutabs in it.

Fry the kutabs in a dry skillet on both sides for 2 minutes each.

After frying, brush the kutabs with butter—the dough will become very soft. Cover the kutabs with a clean towel or plastic wrap, let them rest for 5–7 minutes. Then serve.
