
Potato-stuffed kuttabs
Description
The pastry is simple and quick to prepare. Kutabs are a dish from Azerbaijani cuisine—very tasty and easy to make, with various fillings. This is a versatile dish, perfect to take along on a walk or to work (and share with colleagues), or enjoy with a cup of tea or sour milk for dinner. Step 1

Peel the potatoes, cut them into small cubes, and boil in salted water. Mash the cooked potatoes into a puree, let it cool for a while, then add finely chopped herbs and mix everything together.

In a bowl, mix the flour and salt, add warm water, and knead until you get a soft dough. Cover the bowl with plastic wrap or a towel and let the dough rest for half an hour.

We make small balls from the dough and roll them out very thinly into flatbreads on a floured surface.

To make the kuttabs neat and attractive, use a bowl to shape them into a circle. Cut off the excess dough.

At this stage, you can already add the filling, but I cut the circle in half and place the cooled filling on one half. Then cover the filling with the other half of the dough and press the edges with a fork. You can use less filling to make thinner patties.

Place the kuttabs on a hot dry skillet and fry over medium heat until golden brown on both sides. Brush the hot kuttabs with butter and serve with vegetables and sauce.
