
Venison pieces with orange flavor

Cut the venison into pieces and place them in a bowl.

Place the pieces of venison in red wine, add orange zest, bay leaves, thyme, chili pepper, and onion. Cover with a lid and let marinate for 6 hours.

Wash the tomatoes and mash them well; peel and slice the mushrooms.

Mix the mushrooms in a pot with small pieces of bacon, 10 grams of butter, seasoning and salt, and cook for several minutes.

In another saucepan, sear the pieces of venison with the remaining fat; when a golden crust forms, place them into a container and add the wine from the marinade, previously filtered through a sieve to remove orange zest and onion.

Let the wine evaporate over medium-high heat, then add mushrooms, tomato purée, chopped thyme, ground pepper, and salt.

Add water, mix, cover with a lid, and cook over low heat for about 1 hour. If the sauce thickens too much, add a little water. Arrange the pieces of venison on a serving dish, pour over the sauce, and sprinkle with chopped parsley, a little orange zest, and thyme.
