
Couscous with tomatoes
Description
The dish is prepared without unnecessary complications. For this recipe, I used Israeli couscous (ptitim), but it can be replaced with traditional couscous. Corn and bell pepper would also taste great added to the vegetables. This is a delicious and aromatic dish, suitable for lunch or as a side dish for dinner. The finished dish can be served at the table.

Prepare all the ingredients.

Cook couscous in boiling, salted water for 15-20 minutes.

Heat a skillet over medium heat. Add finely chopped onion, garlic, and carrot. Sauté until soft.

Wash the green beans, dry them, and cut into 2-3 cm pieces. Simmer the beans under a closed lid for 5-6 minutes.

Slice the tomatoes into large pieces. Cut the cherry tomatoes in half. Sauté the tomatoes until soft. Season with salt, pepper, and sprinkle with Italian herbs. Mix well.

At the end, add the couscous and finely chopped parsley. Mix once again. Simmer everything together for another 3-4 minutes.
