
Couscous with vegetables and meat
Description
Today I suggest preparing couscous with vegetables and meat. This dish tastes somewhat similar to pilaf, but is more delicate. You can use almost any type of meat: lamb, chicken, rabbit, pork, or goat. I'm using beef today. Feel free to combine vegetables according to your taste—add or omit as you prefer. This dish is aromatic and very delicious; I'm sure you'll love it! Give it a try.

Prepare all the ingredients.

To prepare the dish, it's best to use any heavy-bottomed cookware; I use a cauldron. Pour in the oil, heat it, and add the meat cut into pieces.

Sear the meat over high heat until browned, then add a small amount of water and simmer over low heat until tender. Season with salt and spices to taste during cooking.

When the meat is ready, add the onion and carrot cut into random pieces. You can chop the vegetables any way you like; I prefer larger pieces.

Sauté everything together until the vegetables are tender.

Add the pepper cut into strips and the tomato cut into wedges.

Simmer the meat with vegetables for another 5 minutes.

Add the couscous (no need to rinse).

Add 1–1.5 cups of hot water. Adjust the seasoning with salt, bring to a boil, turn off the heat, and let it steep for 5 minutes.
