Couscous with chard, raisins, and feta cheese

Description

The recipe won't take much time. This delicious and healthy side dish made with red chard, couscous, raisins, and chickpeas can be served either hot or cold. If desired, you can add a poached egg or toasted walnuts to the dish. Serve hot.

    1. Finely chop the garlic. Separate the chard stems and leaves and chop them individually. Rinse the lamb's quarters.

    2. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add half of the garlic and the couscous, cook, stirring, for 3 minutes.

    3. Add vegetable broth and bring to a boil. Cover with a lid, reduce heat, and simmer until all the broth is absorbed by the grain, about 10 minutes. Stir in raisins and season with salt.

    4. Meanwhile, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the remaining garlic and chard stems. Cook, stirring occasionally, for 5 minutes.

    5. Add chard leaves, lamb's quarters, 1/2 cup of water, and balsamic vinegar. Cover with a lid and cook until the chard leaves wilt, for 2 to 3 minutes.
