Description
The dish is prepared without unnecessary complications. The filling can be cottage cheese, young nettle, eggs, or minced meat. Kurze differ from classic dumplings or pelmeni in the way they are shaped. Dagestani housewives use a "braid" technique when shaping them. It's difficult to convey this process in photos, so I recommend watching a video tutorial on how to shape them. Otherwise, the dish is no more difficult to prepare than our pelmeni, and turns out filling and very delicious. Give it a try! The finished dish can be served at the table.

Prepare all the ingredients.

In a deep bowl, combine water, one egg, and 0.5 tsp salt.

Add the flour in parts.

Knead a firm and elastic dough. Gather the dough into a ball. Cover with a towel and let it rest.

Dice the onion and sauté in butter.

Place the cottage cheese into a deep bowl.

Add the fried onion, egg, chopped dill, garlic pressed through a garlic press, salt, and pepper to the cottage cheese to taste.

Cut off a piece of dough and roll it out thinly, as you would for dumplings. Using a glass of appropriate size, cut out identical circles.
