Instructions
- 1
Step 1

1. Prepare the ingredients. Let's get started! The original recipe calls for dill greens, but I'm adding dill and chives.
- 2
Step 2

2. Cut the peeled potatoes in half or into quarters, cover with water just enough to submerge the potatoes, and boil until cooked. Season with salt to taste.
- 3
Step 3

3. Sift the flour into a large bowl, add salt, and mix. Make a well in the center, pour in the water, oil, and vinegar. Begin mixing the dough with a spoon, then transfer to the table.
- 4
Step 4

4. Cover the finished dough with a clean, dry towel or wrap it with plastic wrap and let it "ripen".
- 5
Step 5

5. Finely chop the onion into small cubes and sauté in two tablespoons of oil until cooked.
- 6
Step 6

6. Drain all the broth from the cooked potatoes and mash the potatoes with a masher. Pour in 80 ml of the broth. Mix well.
- 7
Step 7

7. Add the fried onions with the fat they were fried in, herbs, and ground pepper. Mix well.
- 8
Step 8

8. The filling is ready, you can start shaping the dumplings.
- 9
Step 9

9. Cut off a piece of dough and roll it out thinly. Use a glass to cut out circles, 8-9 cm in diameter, no larger. Place a teaspoon of filling in the center.
- 10
Step 10

10. Take a circle of dough with potato in your hands—it's more convenient for shaping. Fold the edge of the dough over the potato, as shown in the photo.
- 11
Step 11

11. Then, one by one, take a small piece from the first side edge, then from the second, alternately. This way you create a braid. The dough is thin and very easy to shape; you only need to pinch the edges slightly.
- 12
Step 12

12. My first batch is ready. Bring the cooking water to a boil, add salt. Add the kurze and cook for 5 minutes from the moment the water starts boiling.
- 13
Step 13

13. Place the ready dumplings on a plate in the shape of a circle.
- 14
Step 14

14. Place sour cream in the center, then sprinkle with black pepper, red pepper, and herbs.
- 15
Step 15

15. Enjoy! Kurze with potatoes is incredibly tender and delicious!
