
Kurniki
Description
Perfectly pairs with tea and coffee. Kurники are small open pies that can be made with various fillings. The original recipe uses chicken meat, although many people easily substitute it with other types of meat. Besides meat, you can add various vegetables, mushrooms, herbs, and cheese. Serve the baked kurники with sauce or enjoy them straight from the oven. The pastry is ready. Serve at the table.

1. Warm the milk to room temperature, add a spoonful of sugar and yeast, mix well, then set aside in a warm place for 15–20 minutes. In a separate bowl, melt the butter, add a spoonful of sugar, salt, and beat in the eggs.

2. Combine the sponge with the butter and eggs, gradually adding the pre-sifted flour, and finally pour in a tablespoon of sunflower oil.

3. Knead the dough, place it in a bowl, cover with plastic wrap, and let it sit at room temperature for 40 minutes.

4. For the filling: peel and finely chop the potatoes, chicken, and onion, season with salt and pepper, and add a tablespoon of sunflower oil.

5. Divide the risen dough into portions, roll into balls, then roll each ball into a small flatbread. Place the filling in the center, fold into a triangle, leaving a small hole in the middle. Place the kurniks on a baking sheet, cover with plastic wrap, and let rest for 20 minutes.

6. Mix a tablespoon of milk with a yolk, and brush each pie with the mixture using a pastry brush. Place the pies in a preheated oven at 180°C for 15 minutes.

7. After 15 minutes, remove the kurniks and inject 1-2 tablespoons of broth into each one using a syringe. Then cover them with foil and return to the oven for another 15 minutes. After that, remove the foil and bake until fully cooked (15 minutes).
