
Fish kurnik
Description
Perfect with tea or coffee. Making a fish kurnik is quite easy. Use whatever fish you like and have on hand—it will be delicious with any fish. To give the pie a festive look, use cookie cutters, or cut flowers and leaves out of the dough with a knife. Otherwise, follow the recipe and you will be pleased with the result. Serve cooled or slightly warm.

Prepare the ingredients according to the recipe list.

Place the sour cream in a bowl for kneading the dough, add baking soda and salt to it, and mix.

Add vegetable oil (or soft butter) to the sour cream and mix.

Add the flour. Knead the dough by hand or with a stand mixer. Do not knead for too long; the main thing is that all the ingredients come together.

Wrap the prepared dough in plastic wrap and refrigerate it while you prepare the filling. The dough will look uneven—that's normal; this is what gives it a light flaky texture.

Cut the cleaned fish into small cubes.

Add finely chopped onion.

Cut the potatoes into small cubes and add them to the main filling. Add butter to the filling in small pieces, and season with salt and pepper to taste.

Dust the work surface lightly with flour, divide the dough into three unequal portions.

Roll out the dough into a sheet about 5 mm thick.

Transfer the dough onto a baking sheet lined with parchment paper. For convenience, you can transfer the dough by rolling it onto a rolling pin. Spread the filling on the dough, leaving about 2 cm from the edge.

Cover the filling with a second layer of dough.

Fold the edges of the dough and pinch them tightly so the filling is sealed inside. You can do this with a fork, for example.

From the last piece of dough, make decorations to garnish the pie. Attach the decorations to the surface of the pie, brushing them on with a mixture of egg yolk and 2 teaspoons of milk. Brush the entire pie with the same mixture. Pierce the pie with a wooden skewer, leaving a small hole in the center so steam can escape during baking and the pie does not crack. Preheat the oven to 170–180°C and bake the kurnik for 1 hour.

Cool the finished pie on a wire rack.
