
Chicken and rice kurnik
Description
The recipe won't take much time. I had leftover pancakes at home from Maslenitsa, and I thought, why not make some baked dish with them? I found this recipe in an old cookbook. To prepare the kurник with rice and chicken, I also add mushrooms—just regular fresh or frozen champignons. The kurник turns out very filling—it can replace both main courses and can be served with tea or coffee.

Boil the chicken, then cut it into pieces.

Make the dough: mix the butter with sour cream, milk, and egg. Gradually add flour and baking soda, knead the dough. Refrigerate for 40 minutes.

Meanwhile, cook the rice. Mix it with chopped boiled eggs and herbs.

Fry mushrooms with onions.

Now assemble the kurnik: roll out the dough larger than a pancake. Place it on a baking sheet. Then add the filling, pancake, filling, pancake—repeat until you run out of pancakes.

Roll out another, larger flatbread. Carefully cover the pie with it. You can decorate with braided strips. Leave a small hole on top. Bake the pie for 1.5 hours at 180°C. During baking, you can pour chicken broth into the hole. Serve the cooked chicken and rice pie sliced.
