Description

The pastry is simple and quick to prepare. A delicious kurnik can be made with various fillings, but the classic filling is rice with mushrooms, eggs, herbs, and sauce. Preparing this pie takes more than 2 hours. It is usually made for big celebrations.

    1. To prepare kurnik (classic recipe) you will need about 2-3 hours. Despite being laborious and time-consuming, this pie is always made in Russian cuisine for weddings and big celebrations. First, you need to boil chicken fillet and eggs.

    2. When the fillet is cooked, it needs to be cooled and cut into small cubes.

    3. Now prepare the creamy sauce: put butter and flour into a saucepan. Cook, stirring constantly. It's better to place the container over a double boiler.

    4. Then add the cream and broth. Cook until thickened, then remove from heat and blend.

    5. Then, separately mix the yolks with the flour and rub them thoroughly.

    9. Now it's time for the mushrooms: add the sliced and washed mushrooms to a frying pan and sauté; at the end of cooking, add the sauce and simmer, stirring constantly.

    11. Knead the dough and divide it into two parts: the base and the "lid" for the kurник. That is, one part should be three times smaller than the other.

    12. Place the dough onto a baking sheet, shape the edges, and add the filling. While we were preparing the sauce and dough, we should have boiled the rice and mixed it with herbs. The first layer in our pie will be rice.
