
Classic Kurник
Description
Delicious pastry for the whole family. The classic kurnik was considered in Russia a symbol of abundance and hospitality. There are many recipes for this pie, but the most popular remains the traditional one, which is closest to the pie our ancestors used to make. The distinctive feature of this pie is the use of enriched dough and a variety of fillings. Grains, mushrooms and meat, potatoes and eggs, herbs were layered on the dough and separated with pancakes. A small hole was always made on top of the pie to let steam escape during baking. Serve warm or cooled. Perfect with tea.

First, prepare the dough for the kurник. Mix flour, butter, 1/4 cup of milk, sour cream, and baking soda, and stir well. Knead the dough first with a spoon, then by hand until it becomes smooth and uniform, without lumps. Divide the dough into two parts, wrap each in plastic wrap, and let it rest.

Prepare the pancake batter: mix the egg with milk, add salt, sugar, and gradually add flour in small portions. You should get 6-8 pancakes (depending on the size of your pan). The pancakes will serve as the layers of our cake.

Prepare the filling: peel the onion and finely chop it, sauté in a frying pan, then mix with cooked rice. Cut the chicken into small pieces and boil until done. Slice the mushrooms and fry them, then mix with chopped eggs and herbs.

Assemble the pie. Roll out 1 portion of the dough into a medium-thick layer and use it to line the bottom of a greased pan, making sure the edges of the dough cover the sides. Place the filling on top and spread it evenly, then cover it with the dough layer.

Layer the filling, placing a pancake over each layer of filling. The filling should be layered in strict order: first rice, then chicken, and finally mushrooms. Cover the last layer of filling with a piece of dough.

Brush the pie with beaten egg yolk mixed with a drop of water, and place it in a preheated oven at 200 degrees for 20-30 minutes, until a golden crust forms. To prevent the pie from falling apart during baking, poke holes with toothpicks.
