Step 1

1. In one bowl, mix milk and eggs; in another bowl, mix flour and spices. Place the meat in a separate bowl and prepare a dish for the breaded meat.

Step 2

2. Take one piece of meat, season both sides with salt and pepper, then dip it into the milk-egg mixture. Next, place the meat onto a plate with flour. Roll it to ensure the flour completely covers it. Dip the meat into the milk-egg mixture again, then into the flour once more. Place the breaded meat onto a clean plate. Repeat with the remaining meat.

Step 3

3. Heat the oil in a large skillet over medium heat. Cook the meat, three pieces at a time, until the edges turn golden brown, about 2 - 2 1/2 minutes per side. Transfer the meat to a paper towel and keep warm. Repeat until all the meat is cooked.

Step 4

4. Prepare the sauce. Pour the fat from the meat into a bowl. Heat the skillet over medium heat. Add 1/4 cup of the fat back into the skillet. Evenly sprinkle 1/3 cup of flour over the fat. Using a whisk, mix the flour into the fat to form a golden-brown paste. If the paste appears too greasy, add another tablespoon of flour and mix well.
