
Chicken roll (sausage substitute)
Description
The recipe won't take much time. Homemade chicken roll is an excellent alternative to store-bought sausage. You can give this roll to even children without worrying about their health, provided you add a little less spice. Cut the chicken fillet into small cubes. You can mince half of it in a meat grinder and cut the other half into cubes.

Add all the spices and minced garlic to the meat, mix well for about 5 minutes.

In a well-kneaded mixture, the meat cubes should stick together as if glued.

I have a meat grinder. Instead of it, you can use a narrow metal cup. Insert a baking bag with a bottom into it and place the meat inside. Pack the meat very tightly.

Tightly tie the bag with meat, assemble the meat grinder. You can place a saucer smaller than your metal mold.

I'm continuing to assemble the meat grinder.

And cover with a lid. You can simply place a heavy weight on the plate to press down your future roll. Refrigerate overnight.

Then place the mold with the future roll into a pot and pour in cold water until it reaches slightly above the level of the meat in the mold, but stays about 3 cm below the top edge of the mold. Cook for 1 hour and 40 minutes, starting from the moment it begins to boil.

Then cool and refrigerate for about 6-8 hours. Remove, take out of the bag.
