
Chicken roll with omelet
Description
This recipe won't take much time. Chicken roll-ups are an excellent option for an appetizer, snack, or festive dish. You can vary it by adding different herbs (parsley, dill, sorrel, etc.), as well as vegetables (peppers, tomatoes). Roll-ups made using this recipe are well suited for those who follow a healthy diet. I serve them cooled with any vegetable side dish or vegetable salads. Serve with herbs and sauce.

1. In a deep-sided bowl, I beat all the eggs and mix until smooth.

2. Pour milk into the egg mixture in a thin stream and mix thoroughly.

3. I add spices to taste to the mixture (red and black pepper, table salt, oregano, dill and parsley, basil).

4. Add four tablespoons of oats to the mixture and stir; leave for 20–30 minutes to swell.

5. For the filling: wash the chicken fillet and pat it dry with paper towels, cut it into pieces and transfer to the blender bowl, add peeled onion cut into pieces and process until finely chopped (you can also use a meat grinder).

6. Line a baking sheet with parchment paper, spread out the omelet and level it over the entire surface, and bake in an oven preheated to 180°C for 7–10 minutes.

7. I spread the prepared ground chicken over the omelet and carefully roll it into a roll.

8. Line another baking sheet with foil and transfer the freshly made roll seam-side down onto the foil-lined baking sheet.

9. I wrap the roll in foil, then wrap it in several more layers of foil, crimping all the edges tightly so the juices don’t leak out, and bake it in an oven preheated to 200°C for 30 minutes; then I leave the roll in the oven until it cools.

10. I unwrap the finished roll and transfer it to the refrigerator for 2–3 hours, then slice it into pieces and serve it at the table.
