
Chicken roll with mushrooms
Description

1. Wash the chicken and let the water drain off. Cut open the chicken breast and turn it outward. Carefully remove all the bones from the carcass, trying not to damage the skin. As a result, you'll get a rectangular piece of meat with the skin intact. Place it on a cutting board and gently pound it with a meat mallet. Rub salt and pepper into the meat, and optionally sprinkle a little lemon juice over it.

2. While the meat is salting, prepare the filling. Rinse the mushrooms and slice them thinly. Crush the walnuts with a rolling pin. Grate the cheese on a fine grater. Melt the butter in a frying pan and sauté the mushrooms for a few minutes until cooked. Take out the meat and spread the mushrooms evenly over it, then add the walnuts and sprinkle with grated cheese. Leave the edges of the meat free.

3. The most important step remains. Tightly roll up the roulade and tie it with kitchen twine. Sear the roulade in a small amount of oil until a golden-brown crust forms. Now wrap the roulade in foil and place it in an oven preheated to 200 degrees Celsius. Bake for about 30 minutes. Serve with fresh herbs and vegetables.
