
Chicken pâté in a multicooker

1. Although chicken liver is quite tender, the recipe for chicken pâté in a multicooker calls for soaking it in milk first. Wash the liver in advance, remove any excess membranes, and pat dry lightly. Leave in milk for 30–60 minutes.

4. Add the onion and carrot to the melted butter. You can sauté or stew them for 5–7 minutes. Meanwhile, wash the liver thoroughly and pat it dry. If desired, you can also add garlic.

5. Place the dried liver into the bowl with the sautéed vegetables. Mix gently and add a little water. Cover with the lid and cook on Stew mode for about 30 minutes.

6. Depending on the power of your multicooker, braise the liver for 30 minutes to 1 hour. Afterward, season with salt and pepper to taste. If desired, add chopped fresh herbs or your favorite spices.

7. For homemade chicken pâté in a slow cooker to have a smooth, even texture, it is best to use a blender. If you do not have one on hand, you can use a meat grinder. Grind the liver (without the cooking liquid, so the pâté is not too runny), adding a little butter and heavy cream as you go.
