
Chicken pâté
Description
The appetizer is prepared quickly and simply. Chicken pâté is made from chicken liver, onion, butter, cream, and spices. You can add carrots and brandy (sherry). All ingredients are sautéed, then ground (with a meat grinder or blender). Chicken pâté is served on crackers, chips, or bread.

1. Peel and dice the onion. Cut it however you like, since you'll later blend the onion with the remaining ingredients in a blender. In a large skillet, melt 20 g butter and sauté the onion until golden, then add the rinsed liver. Fry the liver until browned, stirring occasionally. Add the cream, salt, pepper, thyme, and brandy or sherry (if using). Reduce the heat to low and braise the liver with the onion for 15–20 minutes.

2. Transfer the cooked chicken liver with onions into a blender. Blend until smooth.

3. Cool the chicken pâté, then transfer it to a clean jar with a tight-fitting lid. Store the pâté in the refrigerator.
