
Chicken Paprikash
Description
The dish is easy to prepare without unnecessary complications. It is juicy, so it pairs well with side dishes made from grains, pasta, or boiled vegetables. You can use different cuts of chicken (you can buy a whole chicken and cut it into pieces). Cook it in a heavy-bottomed pot to ensure the meat becomes tender. Store the dish in the refrigerator, but not for too long, so the meat doesn't absorb too much sauce. Serve the dish warm.

1. Wash and thoroughly dry the chicken drumsticks. Cut them in half at the joint. Season the chicken evenly with salt and pepper. Heat a pot with oil, then arrange the chicken in a single layer. Do not overcrowd the pot; if necessary, cook the chicken in two batches. Sear the drumsticks on both sides until golden brown, about 5–7 minutes. Remove the chicken from the pot.

2. Wash, peel, and chop the pepper and onion. Add the pepper and onion to the pot after the chicken, cover with a lid, and cook until the onion turns golden-brown.

3. Add paprika and sauté for 30 seconds, stirring constantly. Be very careful not to overcook the paprika.

4. Pour chicken broth into the saucepan, add chicken drumsticks, bring to a boil, cover with a lid, and simmer over low heat for an hour, until the meat easily separates from the bone.

5. Mix the flour and sour cream with a blender or by hand until you get a smooth, lump-free mixture. When the chicken is cooked, add the chicken broth to the sour cream one spoonful at a time, stirring thoroughly until the sour cream becomes warm. Then pour the sour cream mixture into the pot and stir. Do not bring to a boil; turn off the heat.
