1. First of all, sauté the mushrooms with onion until cooked. I'm using wild mushrooms, frozen.

2. Season the mushrooms with salt and pepper to taste, and let them cool.

3. Then the mushrooms need to be chopped with a knife. You can cut them into small pieces before frying.

4. Carefully remove the bone from a chicken thigh (if it's small) or a drumstick. Try not to cut the skin.

5. Pound the meat. Season with salt and pepper.

6. Place the prepared mushrooms and, lifting the edges of the beaten meat layer, shape it into a ball.

7. My bacon strips are long. I cut one strip in half and use one piece to cover the top of the meatball (at the spot where the edges of the meat patty meet), then wrap the whole meatball around its circumference with the full strip of bacon.

8. We need cotton threads. Cut 8 pieces approximately 25 cm long. Lay out 4 of them as shown in the photo. The remaining 4 are for the second ball.

11. Serve the kolobki with any side dish; I decided to bake potatoes along with the kolobki. Brush the kolobki with a small amount of mayonnaise.
