Chicken Aspic
Description
To prepare chicken aspic, use ingredients such as carrots, eggs, garlic, and chicken. The dish turns out hearty and very tasty. Personally, I like this aspic even more than pork aspic. Mustard or horseradish goes very well with aspic. It can be served warm or chilled.

Step 1

1. Rinse the chicken in cold running water, then remove the skin. Place the chicken in a large pot and cover it with cold water (the chicken should be covered by about five centimeters of water). Place the pot over high heat.

Step 2

2. When the water comes to a boil, skim off the foam and reduce the heat. Simmer for about 4 hours on low heat. Skim off the fat and foam periodically. The meat should come completely off the bone. Peel the garlic, carrot, and onion and add them to the pot. Simmer for another thirty minutes. Add the peppercorns and bay leaf. Simmer for another thirty minutes.

Step 4

4. Remove the cooked carrots, garlic, and onion from the broth. Strain the broth and let it cool. Separate the meat from the bone, cut it into small pieces, and arrange it in the mold. In a glass of broth, dissolve two tablespoons of gelatin, then pour the dissolved gelatin back into the broth. As for the gelatin, check how the manufacturer recommends dissolving it and follow the instructions.
