
Chicken cutlets with liver and apple
Description
The dish is prepared without unnecessary complications. These zrazy have a bright, rich flavor. Be sure to try them! Use apples of sweet-sour varieties; chicken liver can easily be replaced with turkey liver. The finished dish can be served.

For the filling, sauté the onion in vegetable oil and add the liver cut into large pieces. I used turkey liver. Fry, stirring, until lightly browned. The liver should remain pink inside. Let the liver cool, then pulse in a blender with herbs until blended.

In the remaining oil in the pan, sauté the peeled and diced apples. Sprinkle with sugar during cooking and cook until soft, without browning. Then remove from heat and add the butter, allowing it to soak into the apples. Add the apples to the liver, season with salt and pepper, and be sure to add a pinch of nutmeg.

Pound the chicken fillet with a blender or pass it through a meat grinder together with a small onion and oat flakes. Add cold milk, egg, salt, pepper, and knead the mixture well.

With wet hands, shape the patties from the minced meat, placing a spoonful of liver filling in the center of each. Coat the patties in flour. I prefer rice flour, as it hardly burns during frying.

Sear the zrazy in a pan until golden brown, then place them in a preheated oven at 180 degrees for about 10 minutes to fully cook the chicken meat.

As a side dish for these cutlets, I recommend lightly sautéing diced apple, pear, and zucchini in a mixture of butter and vegetable oil. Then add sweet pepper and celery stalks, sprinkle lightly with sugar. Heat everything together for 2-3 minutes, season with salt, and sprinkle with paprika and curry.

Serve the zrazy hot with a vegetable side dish and fresh herbs.
