
Chicken necks stuffed with giblets

Separate the chicken necks from the skin and bones.

Add salt and semolina to the water. Cook the mixture over heat for 3-4 minutes, stirring constantly, until thickened. Then let the porridge cool.

Fry the skin with fat in a pan. Separate the cracklings.

Peel the onion and finely chop it. Fry it in the fat from under the skin until golden brown.

Boil the offal for 3-4 minutes in boiling water, then finely chop.

Mix the cracklings with onions, minced garlic, giblets, and semolina.

Sew the necks on one side with thread. Fill them with the prepared filling from the previous step. Then sew the skin on the other side as well.

Place the necks into boiling water. Simmer them over low heat for 45 minutes.
