
Chicken kebabs with lemon

1. Trim excess fat from the chicken fillet and cut it into cubes. Each fillet should yield 5-6 cubes. Grate the zest of two lemons using a grater. Place the chicken, olive oil, lemon zest, lemon juice, oregano, white wine vinegar, salt, and pepper into a bowl, cover with a lid, and refrigerate to marinate for 2 to 8 hours.

2. Set the grill to maximum heat. Cut the pepper in half, remove the core and seeds, and slice each half into four pieces, for a total of eight pieces. Slice the remaining two lemons into rounds and cut each round into quarters. Skewer the peppers, lemons, and chicken onto the skewers.

3. Place the skewers under the grill and cook for 10 minutes. Remove the skewers, brush each one with 1 teaspoon of marinade, and return them under the grill. Cook for another 10 minutes. Chop the parsley. Heat the remaining marinade in a saucepan.

4. Take out the skewers, place each on a separate plate, pour over the marinade, and sprinkle with parsley. Serve with rice, salad, or toasted bread.
