
Chicken skewers with pineapple salsa
Description
The recipe won't take much time. Chicken skewers with maple-pineapple sauce and pineapple, jalapeño, cilantro, and onion salsa make a great option for a summer picnic. Instead of chicken, you can use pork or beef steaks. Serve hot.

1. If you are using wooden skewers, be sure to soak them in water for several hours. Cut the chicken breasts into pieces and thread them onto the skewers.

2. Mix maple syrup, soy sauce, and pineapple juice in a small saucepan.

3. Bring it to a boil, then reduce the heat to medium and cook until the liquid has reduced by about one quarter. Let it cool.

4. In a small bowl, mix the chopped pineapple, minced jalapeño, chopped cilantro, diced red onion, vinegar, sugar, salt, and black pepper. Set the salsa aside.
