
Chicken "shredded" with vegetables, spinach, and feta cheese
Description
You can use almost any vegetables, replace spinach with celery or dill, feta cheese with any other cheese. The possibilities are endless! Try and experiment

Step 1

Cut the chicken meat into small cubes. I prefer using a mix of meat from the breast and thighs. In the pulse mode of the blender, process the vegetables until they turn into coarse crumbs. You can also grate them on a grater, but using a blender is faster and results in a more tender texture.

Mix the vegetables with the chicken meat, then add crumbled feta cheese, egg, black pepper, and a spoonful of flour. Season with salt carefully, remembering that feta is salty.

Mix the mixture well. You may need to add more flour – the mixture should be thick enough to fall from the spoon in a soft lump, not run off.

Fry the chicken pieces in clarified butter – this will make them especially delicious. Cook over slightly below medium heat, slowly, ensuring the chicken is thoroughly cooked through. Turn them when the bottom side is more than half cooked.

Place the finished rastrypki on a plate and keep warm until serving.
