Chicken dumplings

Description

The recipe won't take much time. Chicken thigh mince works best for this dish. If you don't have a meat grinder, use store-bought chicken mince. Serve the dumplings warm with ketchup, sour cream, or vinegar (my personal favorite). Alternatively, drizzle with melted butter and garnish with parsley. Serve hot.

    Step 1

    Using a whisk at medium speed, beat the buttermilk, sour cream, warm water, eggs, and half a tablespoon of salt until all ingredients are thoroughly mixed.

    Using a mixer (with a hook attachment), incorporate 4 cups of flour into the mixture. Mix at medium speed until well combined.

    Add another 3 cups of flour (one at a time) until all ingredients are combined. Add the remaining flour, 1 tablespoon at a time, until the dough no longer sticks to the bowl. Knead for 5 minutes (total mixing time should be about 20–25 minutes from the moment the flour was added).

    The dough should be soft and elastic. Cover the dough with plastic wrap or a towel.

    For the filling, pour vegetable oil into a skillet and place over high heat. Add chopped onion and cook until golden and soft (4-5 minutes). Add garlic and cook for another minute, then remove the onion and garlic from the heat.

    Mix together: chicken mince, sautéed onion and garlic, 4 salts (less than a teaspoon), a pinch of pepper, and 2 tablespoons of chopped parsley.

    Cut off a piece of dough 2.5-5 cm thick. Pinch off a ball of dough the size of a piece of chewing gum and roll it into a circle (3 cm in diameter). If it's difficult to roll, dust the rolling pin and work surface with flour.

    Place 1 teaspoon of filling onto the dough. Bring the edges of the dough together to form a half-moon shape. Pinch the two corners together – and you'll get the classic dumpling shape.

    Transfer the dumplings onto a well-oiled cutting board. Arrange the dumplings evenly on the board, sprinkle with flour, then either cook them or place them in the freezer.

    Bring water to a boil in a pot (if the pot is large, add 1 tablespoon of salt; if it's a 4-liter pot, add 1 teaspoon). Add fresh or frozen dumplings and bring to a boil. Once the dumplings float to the surface, boil for 3 minutes or longer (until the meat is fully cooked).
