
Chicken patties with tomatoes and arugula
Description
The recipe won't take much time. If you're against store-bought minced meat, prepare it yourself from red meat, preferably from thighs with a little fat—using fillet makes the patties rather dry. Instead of semolina, you can add couscous; it gives chicken patties a very interesting texture. Serve hot.

Prepare the ingredients. Wash and dry the arugula, tomatoes, and onion.

Chop the onion into small cubes, add to the minced meat along with the egg, salt, pepper, and semolina. Add the semolina with a small heap. If desired, you can add your favorite meat seasoning.

Thoroughly mix the minced meat and let it sit for about 15 minutes to allow the semolina to swell properly.

Finely chop the arugula, add it to the meat mixture, and mix well.

With wet hands, take a little of the minced meat, place it inside a cherry tomato, and shape it into a patty of the desired form.
