Description

The recipe won't take much time. So, chicken cutlets, of course, require chicken. You can buy ready-made fillets to make the task easier. Alternatively, you can prepare the chicken fillet yourself by properly cutting it off the carcass. Serve hot.

    To prepare chicken Kiev cutlets, we need chicken fillets. In the classic version, the chicken fillet should be removed from the whole chicken carcass. Kiev cutlets are usually made with a bone, specifically a properly cut portion of chicken fillet attached to a wing bone. I'll show you a simpler method. Take chicken fillets and slice each fillet lengthwise into thin slices. From one regular fillet, you'll get 2-3 slices.

    Pound the chicken fillet lightly with a mallet. Now season with salt and pepper to taste. In a separate bowl, mix the chopped herbs with 1 teaspoon of lemon juice and 150 g of butter.

    Place the prepared mixture (about 1 teaspoon) onto the edge of the prepared fillet. Roll up the fillet into a roll.

    We'll get a neat little roll like this. Try tucking the edges of the fillet so that the butter isn't visible.

    Beat the eggs with milk. Add a little salt.

    Grate the baton on a coarse grater, previously removing the crust. It's better to use yesterday's baton. Store-bought breadcrumbs are not suitable and the dish will turn out completely different (with breadcrumbs or with baton).

    Dip the chicken fillet into the egg mixture, then into the flour, then again into the egg mixture, and finally coat in breadcrumbs. Gently press the cutlet between your palms to compact the breading and shape the patty.

    Pour vegetable oil into a saucepan. Add the patties and fry them in hot oil very quickly, stirring constantly, so that an even golden crust forms. Remove the patties from the oil. The inside of the patties will remain slightly undercooked. Transfer the patties onto a baking sheet lined with parchment paper. Preheat the oven to 200°C (390°F) and bake the patties for 20–25 minutes.
