
Braised Chicken Gizzards
Description
In some countries, chicken offal is considered a great delicacy, so dishes with it are served only on holidays. Here, however, it is an ordinary product, often underestimated. Gizzards can be used to make gravy, stewed potatoes, salads, and appetizers. Chicken gizzards can be served with a side of potatoes. They are stewed with aromatic spices, in sour cream or cream, as well as in tomato sauce.

Peel and chop the onion into small pieces, mince the garlic. Peel the ginger and grate it finely, chop the parsley finely.

Pour olive oil into a saucepan and add the onion, then add the garlic, bay leaf, and sauté for 5-7 minutes.

Add parsley and minced ginger to the pot, mix well.

Wash the cleaned chicken gizzards and add them to the pot, then add diced medium-sized pepper.

After boiling, reduce the heat and simmer for 10 minutes. Then add the wine and tomato paste, mix well, cover with a lid, and cook for about half an hour until a thick mixture forms.

Season with salt and spices to taste, pour in boiling water and, if necessary, add olive oil. Simmer for another 15 minutes.

Taste and check for doneness, then turn off the heat, cover the pot with a lid, let it sit for 15 minutes, and serve hot.
