Step 1

1. Today, it's very easy to buy clean and processed chicken gizzards. Purchase chilled, not frozen gizzards, so you can see their appearance. Rinse them under running water, then boil in salted water.

Step 2

2. Boil the chicken gizzards for about 45 minutes. Meanwhile, separately cook the cauliflower and broccoli. Break them into florets and boil for 5–7 minutes in salted water.

Step 3

3. Boiled gizzards should be transferred to a frying pan. After frying slightly, add chopped leek to them.

Step 4

4. Prepare the sour cream sauce separately: mix the sour cream with salt and spices, bring to a boil. Add a couple of pinches of flour and cook for 3 minutes, stirring constantly.

Step 5

5. When the gizzards are browned, pour in the sour cream sauce and sprinkle with grated cheese. Add the boiled cauliflower florets and simmer for another 10 minutes over low heat, then remove from the stove and let stand for 10 minutes.

Step 6

6. While the gizzards were simmering, I boiled the side dish. Rice goes perfectly with gizzards. Mashed potatoes can also be prepared. Moreover, chicken gizzards stewed in sour cream are excellent as a standalone dish.
