
Chicken gizzards with vegetables
Description
The dish is prepared without unnecessary complications. In addition to the listed vegetables, you can add string beans to the dish. Alternatively, before adding the sautéed vegetables to the gizzards, you can add sliced potatoes and simmer them together, then add the vegetables afterward. This way, you'll get a complete hot dish, though it will take a bit more time. I prefer to prepare the side dish separately while the gizzards are cooking. See the step-by-step recipe. Prepare all the necessary ingredients.

Wash the gizzards, clean if necessary, and cut into 2-3 pieces. Place in a high-sided frying pan or saucepan. Pour in water, add salt to taste, and simmer over medium heat for 45-50 minutes after boiling.

Peel the vegetables, wash them, and cut into pieces.

In another skillet, sauté the onion in vegetable oil, then add the carrots, peppers, and tomatoes. Add the garlic last, cook for another 1-2 minutes, then turn off the heat. Add chopped herbs to the sautéed vegetables.

After the time has elapsed, add the vegetables to the gizzards, mix well, and simmer over low heat, covered, for another 10–12 minutes. Add a little more salt if necessary.
