
Chicken breasts marinated with tomatoes
Description
This dish from Indian cuisine shares a common set of spices with Mexican cuisine. Chicken breasts stewed in tomato sauce with tomatoes go well with Basmati rice.

1. Cut the chicken breasts into small pieces. Pass the garlic through a press. Squeeze lime juice. To prepare the marinade, mix crushed garlic, black pepper, cayenne pepper, ground coriander, cumin, cardamom, and lime juice in a large bowl. The sauce will be very spicy, so if you want to make it milder, use less cayenne pepper. Marinate the chicken in this mixture overnight.

2. Slice the onion. Sauté the onion in butter until soft in a large skillet.

3. Add the marinated chicken breasts and fry for about 10 minutes. Add tomato sauce and diced tomatoes. Cook for 30 minutes over medium heat, covered.

4. Chop the cilantro. Add the cream (or a mixture of milk and cream in equal parts) and chopped cilantro, mix well. Serve the chicken breasts with Basmati rice, if desired.
