
Chicken breasts with Parmesan
Description
The recipe won't take much time. Preheat the oven to 220 degrees. Line a baking sheet with foil. In a food processor, combine bread, Parmesan, butter, and a pinch of salt and pepper. The mixture should be crumbly. Transfer it to a bowl. Place flour in a second bowl, season with salt and pepper. In a third bowl, beat the egg white until foamy. Dredge chicken breasts in flour, shaking off excess. Then dip into the egg white, letting excess drip off, and finally coat with the breadcrumb-cheese mixture. Place the chicken breasts on the baking sheet. Bake until browned, for 8 to 10 minutes. Remove from the oven and sprinkle with mozzarella cheese. Continue baking until the cheese is golden, for 2 to 4 minutes. Meanwhile, place tomatoes in a large skillet, crushing them with your fingers. Add garlic, season with salt and pepper. Bring to a boil, reduce heat, and simmer until the sauce thickens, for 6 to 8 minutes. Serve the chicken with plenty of tomato sauce. Serve hot.
