
Baked chicken thighs in the oven (healthy eating)

If desired, chicken thighs can be marinated in kefir or low-fat yogurt. The finished dish can be served at the table.

Prepare the listed ingredients. Instead of pattypan squash, you can use zucchini, eggplant, bell pepper, or cabbage.

Wash the pattypan squash and cut off the stems. Slice it into pieces or rounds and place in a baking dish. Season with salt.

Wash the tomato, remove the core, and slice into pieces or rounds. Place on the pattypan squash. Optionally, you can add sliced onion.

Rinse the chicken thighs and place them on top of the tomato layer. You can remove the skin if you want to make the dish with minimal fat content.

Season the poultry meat with salt and sprinkle with spices. Preheat the oven to 200 degrees and place the dish in the oven for 40 minutes. Be sure to pierce the chicken thighs with a knife in several places after 25 minutes of baking to release the juices.
