
Chicken thighs with potatoes in the oven
Description
The dish is prepared without unnecessary complications. It's deceptively simple and I love serving it with a light vegetable salad (tomatoes, cucumbers, cabbage). I usually prepare one chicken thigh per person. You can make this dish all year round, since potatoes and chicken are always available. If you'd like, add other vegetables such as zucchini or eggplants. The dish is ready to be served.

Wash the meat and rub it with salt and pepper. Peel the potatoes, wash and cut into small pieces.

Place the meat in a baking dish skin-side down, and arrange the potatoes around it. Drizzle the potatoes with olive oil and season with salt and pepper.

Peel the garlic cloves and distribute them in the pan. Wash the lemon and slice it into rounds, then place on top of the potatoes.

Bake the meat with potatoes in a preheated oven at 200 degrees for about 30 minutes.

After half an hour, remove the dish and turn the meat over, then bake for another 20-30 minutes.

Sprinkle the finished dish with finely chopped fresh herbs.
